Snake gourd stir fry/Pudalangai poriyal is a very easy to make and it is a healthy dish that can be prepared in less minutes.Snake Gourd is a very nutritious vegetable and it had lot of fibres in it.
Ingredients
Snake Gourd - 1 chopped finely
Channa dhal-1/4 cup
turmeric powder-1/2tsp
small Onion/shallots - 6 to 8 chopped finely
Sambar Powder - 2 tsp or to taste
Salt to taste
For Seasoning:
Oil - 4 tspMustard Seeds - 1 tsp
Curry leaves - few
Method
- Soak the channa dal in warm water for 30 minutes or more.
- In a pan add the channadal and water and cook it till done.
- Add chopped pudalangai.
- Add turmeric powder and required salt
- cook it till the water evaporates.
- Heat oil in a pan,add mustard seeds and allow to crackle and also add curry leaves.
- Add chopped shallots.
- Add the cooked pudalangai and stir well.
- Add sambar powder and saute well.
- Add grated coconut and mix well.
- Pudalangai poriyal is ready.
- Serve with rice and curry of your choice.
