Butter Chicken masala or murg makhani is a rich creamy chicken recipe that goes well with pulaos ,parathas especially Naan.
Ingredients
To Marinate chicken
Chicken -1/2 kg or 1 lb
Thick yoghurt-5 tbsp
Ginger garlic paste-3tsp
kasuri methi(dried fenugreek leaves)-3 tsp
Turmeri powder-1 tsp
Chilli powder-3tsp
Garam Masala-1 tsp
Lemon juice-3tsp
salt to taste
To Make Gravy
Butter - 2 tbsp
cinnamon-1 inch stick
cloves-5
cardamom-5
Bayleaf-1
Ginger garlic paste -2 tsp
Green chilli-1 sliced
Tomato puree-2 big ripe tomatoes(puree them in blender)
Red chilli powder-3tsp
Garam masala-1 tsp
Sugar-2tsp
kasuri methi-2 tsp
cashewnut paste-3 tbsp(soak cashews for 30 mts in warm water and grind them)
Fresh cream -6tbsp
water -1 1/2 cup
salt to taste

- In a bowl,add yoghurt/curd,ginger garlic paste,kasuri methi ,turmeric powder,chilli powder,garam masala,lemon juice and salt.Mix well and the marinade is ready.
- Put the chicken pieces in the marinade and coat well with the marinade.Rest it for minimum 1 hr to overnight.To infuse more flavors in the chicken,marinate for more hours.
- Next we have to Grill the chicken using either stovetop method or in oven.
- To do in stovetop, add some butter in the pan ,once it become hot,add chicken pieces and fry it in high heat.the chicken will ooze out lots of water.once the moisture gets evaporated ,fry it for few minutes and transfer to a plate.

- Now the grilling part is over.
- To make Gravy,take a pan and add butter.
- Once the butter is melted,add cinnamon,cloves,cardamom and bayleaf and saute for 1 min.
- Add ginger garlic paste and fry it until the raw smell goes.
- Add green chilli,tomato puree and saute it for few mins.
- Add red chilli powder(kashmiri red chilli powder gives a nice color to the gravy),garam masala, salt and saute it till the tomato puree reduces to a thick paste and the oil starts separating from the sides of the pan.
- Add sugar and kasuri methi.
- Now add water and let it boil for few mins.
- Add Cashew paste and cook for few more minutes.
- Add the grilled chicken and allow it to cook in the gravy for few minutes.
- Add fresh cream and stir well .Once it come to boil switch off the heat. Dont boil much after adding fresh cream.
- Now our chicken butter masala is ready.
- Garnish it with chopped coriander leaves,little butter and some cream on top.
