Plum Cake/Christmas Cake

Its Christmas Time :) :)Few days left for Christmas.. And here a Christmas special recipe for you all. Its Plum cake /Christmas Fruit Cake.There are so many variations for this recipe.This recipe is alcohol free.











INGREDIENTS


For Soaking:

Mixed dry fruits - 4 cups
Orange juice - 1.5 cups (Fresh juice)





For Caramel:

Sugar - ½ cup
Warm water - ¼ cup




For Cake:

Plain flour (maida) - 2 cups
Baking powder - 1 tsp
Baking soda - ½ tsp
 brown Sugar - 11/2 cups
salt-`1 pinch
Unsalted Butter -16 tbsp at room temparature
Eggs - 5 @ room temparature
Vanilla essence - 3 tsp
Cloves powder-1tsp
Cardamom powder-1tsp
Cinnamon powder-1tsp
Nutmeg powder-1/2tsp


Dry Fruits used



Dates - 1 cup chopped finely
Raisins - 1 cup
Cashews-1/2 cup(forget to take pic)
Almonds-1/2cup
Fruit mix from Walmart-1cup(contains candied pineapple,candied orange peels,cherries)






Method



  • Preheat oven to 180 degree C.
  • Soak the fruits in orange juice overnight.


  •  Before making the cake, drain the soaked dry fruits and transfer to a bowl.




  • Dust it with 2 tbsp of flour and coat the dry fruits with the flour so that while adding dry fruits to cake batter it wont sink to the bottom .


  • For Caramel Sauce:Take sugar in a pan and heat it.

  • It will slowly start to crystallize.

  • After cooking for some time,the sugar starts to melt

  • Now it started getting light brown color.

  • Cook until you get a nice brown color like this.

  • Switch off the heat and carefully add the water,the caramel syrup  will crystallize.
  • Again heat the caramel syrup,it ll melt again after some time.
  • now our caramel syrup is ready.Transfer to a bowl.

  • Allow it to cool for some time.
  • Lets mix the dry ingredients.

sieve all the dry  ingredients  ie. flour,baking powder,baking soda, cinnamon powder,cloves powder,nutmeg powder,cardamom powder and a pinch salt. and make it ready.

  • In a bowl,add the softened butter to it and beat it well until it becomes soft and creamy.



  • Add the brown sugar and beat well until it becomes smooth.



  • Add eggs one by one and beat it well

  • Add vanilla extract and combine well
  • Add half the flour and beat till it combines well.


  • Add half of the caramel syrup

  • Add the remaining flour and again beat it


  • Add the remaining caramel and combine well


  • Add the soaked dry fruits and 4 tbsp of orange juice and fold it well in the batter.


  • Take two baking pan and line it with parchment paper and also butter the pan
  • Pour this in the prepared pan .

  • bake for 40 to 45 mins.Insert a toothpick,if it come out clean ,it was baked completely.

  • Remove it and let it cool.
  • Now invert it and peel off the parchment paper .
  • serve the yummy plum cake.
