Pineapple Kesari (Sooji Halwa)

Pineapple Kesari is a simple sweet dessert made from Semolina/Sooji/ Rawa. It is often served along side with Idlis or dosas during special occasions. The recipe is very forgiving and is a great start to your South Indian Cooking expertise.



Ingredients


Sooji/Rava/Semolina - 1/2 cup
Sugar-1 cup
Pineapple-1/4 cup
Cashews-2 tbsp
Raisins-1 tbsp
Cardamom powder-1/2tsp
Ghee-4tbsp
water-2cups

Method


  • To Roast Rava: Add Ghee in a pan and  dry roast the rava until it get a slight brown color.Transfer to a plate
  • Add ghee in the pan and roast cashews and raisins.transfer the nuts to  a bowl.
  • Add 2 cups of water in a pan and boil it.once it starts boiling reduce the flame and add the roasted rava little by little and stir well.make sure you stir it well .otherwise it will form more lumps.If it forms small lumps here and there ,use masher or spoon mash it well.
  • once the rava absorbs all the water ,add the  sugar and mix it well..The sugar will get loosen and the rava becomes little watery.cook for few minutes.keep stirring .
  • Add the grated pineapple and cook for few more minutes or until the oil starts oozing out from the sides of the pan
  • Add cardamom powder and roasted nuts .mix it well  and switch of the heat.


Notes


  • You can add the canned pineapple also but it wont taste like the fresh pineapple.
  • you can use pineapple either grated or in chunks.
  • If you want a good color ,you can add a pinch of yellow food color.
