Avial /Mixed Vegetables Curry

Avial is a delicious and nutritious preparation made with mixed vegetables.It is prepared in the combination of healthy vegetables in a coconut mixture.Aviyal is a mild dish which can be served with rice ,Adai etc .Vegetables commonly used in avial are Brinjal,Cucmber,plantain, Cluster beans, pumpkin, carrots, beans, drum sticks, snake gourd etc. It is prepared with as many vegetables as one can get except some mushy vegetables like tomato, cauliflower, ladies fingers, cabbage, onion, sweet potato, etc.one can use their own vegetable choice while selecting the vegetables.It can be made as dry dish or semi gravy also.






Ingredients



Veggies I have Used:

Brinjal-3 medium sized
Cucumber-1 medium
Plantain-1
Cluster beans -6

Carrot-1
Beans-4

For Grinding:

Coconut - 1 cup grated
Green Chilli - 4 to 5(I Skipped)
Cumin Seeds - 1 tsp
Turmeric Powder-1 tsp



For Tempering:

Coconut Oil - 1 tblspn
Mustard Seeds- 1 tsp
Cumin seeds-1/2tsp
fenugreek seeds-1/4 tsp
Curry leaves - 1 spring

Other Ingredients:

Turmeric Powder - 1 tsp
Salt to taste
Water - 1/2 cup to 3/4 cup
Tamarind pulp-2 tsp or to taste


Method


  • In a pan,add coconut oil,Once it become hot add mustard seeds,cumin seeds,fenugreek seeds and curry leaves.


  • Add in the chopped vegetables and saute for few minutes 



  • Add 1 tsp of turmeric powder,required salt and mix well.







  • Add in water and tamarind pulp and mix well.Cover and cook until done .





  • Take coconut,cumin seeds,turmeric powder in a blender and blend it very coarsely without adding water



  • Now add in the coconut mixture to the cooked veggies and cook for 5 minutes.



  • Now our avial is done.




  • Serve it with hot rice/Adai




Notes:


  • It is the coconut oil which gives Aviyal the aroma and taste, hence do not substitute. 
  • You can use Mango / curd instead of tamarind pulp. 
  • If you want it as gravy ,add more water.
