Sambar

Sambar is a very common and popular recipe in south Indian cooking.It is a nutritious dish made with lentils and vegetables..Sambar can be made with a wide variety of vegetables like brinjal, drumstick, pumpkin, radish, ladiesfinger, onion etc.You can add any vegetables depends on your taste.It is served with rice, idli, dosa , pongal etc









Ingredients



Toor dal-1/2cup
Tamarind-small lemon sized
Turmeric powder-1tsp
Chilly powder-2tsp
Sambar powder-2tbsp
Mixed vegetables -1 to 1.5 cups
salt to taste

Veggies used:

Shallots-8
garlic-4 pods
greenchilly-1 big
Tomato-1
drumstick-1
Brinjal-1 big one
carrot-1
beans-5







To temper

Oil-1 tbsp
mustard seeds-1tsp
cumin seeds-1tsp
fenugreek seeds-1tsp
curry leaves



Method


  • Heat oil in a pan,add mustard seeds,cumin seeds,methi seeds ,curry leaves,once it crackles add shallots and green chilli and saute for few minutes.

  • Add all veggies and saute in the oil for 2 minutes


  • Add the spices chilly powder,turmeric powder,sambar powder and salt.coat the veggies well with the spices.






  • Add tamarind water(soak the tamarind in warm water for 30 minutes and extract the pulp) and cook the veggies in the tamarind pulp for sometime.

  • Add the cooked toordal(pressure cook it for 2 to 3 whistles).



  • Add enough water and mix well and allow it to boil for 5 minutes.


  • Garnish it with chopped coriander leaves.


  • Tasty Sambar is ready.Serve it with idlis ,dosas or rice


Notes

  • I used homemade sambar powder.you can use storebought also,but homemade powder taste better than storebought one.
  • If you add more tamarind pulp,add sugar or jaggery to adjust the sourness.
