Rose Cookies is a popular festive snack in Tamil Nadu & Kerala (South India). It has a distinctive sweet flavor and is made using a mould that casts the murukku in the shape of a rosette.
Ingredients
Raw rice flour-300g
Thick coconut milk-200ml
Powdered sugar-100g
Cardamom powder-1tsp
Eggs-1 1/2(2 whites and 1 yolk)
Method
- To make Rice flour,i have soaked raw rice in water for about 1 hr,drained the water and spread it in a cotton cloth till the moisture get evaporated and then powdered it in a mixer and sifted it.
- In a mixing bowl,add the eggs and whisk it well.
- Add sugar and whisk it well.
- Add Cardamom powder.
- Add the thick coconut milk and mix well.
- Add rice flour little by little and make a thick batter.
- Dip mould in hot oil for few minutes before dipping in the batter.
