Chettinad Chicken Masala

Chettinad Chicken Masala or Chetiinad Chicken Roast is a spicy chicken dish from South India. All the spices will be freshly grounded for this recipe which imparts a unique spicy taste and more aroma to the dish.It goes well rice as well as breakfasts like dosa,appams,idiappams,idlis etc.





Ingredients:

For Chettinad masala:



Cinnamon - 1 inch stick
cloves -5
cardamom-4
peppercorns-1/2 tbsp
fennel seeds-1 tbsp
kalpasi(Black stone flower)-1
coriander seeds-2 tbsp
Dry Red Chillies-5
Grated Coconut-3 tbsp


To Marinate Chicken



Chilli Powder -2 tsp
Turmeric powder-1/2tsp
coriander powder-2 tsp
Garam masala-1/2tsp
Lemon juice-1 tbsp
Salt to taste


For Gravy


Cinnamon-1 inch stick
Bay leaf-1
Cumin-1/2tsp
Onion -1 thinly sliced
Tomato-1
Green Chilli-1
Ginger Garlic Paste-3tsp
Chicken -1/2 kg
Oil -3 tbsp


Method



  • Marinate Chicken :Add chilly powder,turmeric powder,coriander powder,garam masala,lemon juice and salt in the chicken and marinate it for minimum 30 mts to overnight.Longer Marination infuses more flavor to the chicken and also the chicken will be so soft .



  • For  chettinad masala: 
Dry roast the spices Cinnamon,cloves,cardamom,peppercorns,fennel seeds and Black stone flower and transfer to a bowl.
  • In the same pan add coriander seeds and red chillies and roast it well.

  • Add coconut and roast it till it get a nice brown color.

  • Once it cools,add it to the blender and grind it to nice powder.


  • Chettinad masala is ready .

  • Now heat a pan ,add oil,once it become hot add cinnamon,bayleaf,cumin and saute for 1 minute.
  • Add sliced Onions and saute it till it attain a nice golden brown color.

  • Add ginger garlic paste and saute until the raw smell goes.
  • Add Green chilly,tomato and saute it till it become soft and mashed up completely.

  • Add marinated Chicken and  saute it for few minutes.
  • Add required salt

  • Close the lid and cook the chicken. Dont add any water,the chicken itself ooze out lots of water ,once the chicken is cooked,open the lid and stir it till all moisture evaporates.

  • Add 1 tbsp of chettinad masala to the cooked chicken and saute it till all the masalas get coated well in the chicken.If u want your chicken to be more spicier,add more chettinad masala

  • Now Chettinad chicken masala/Chettinad Chicken roast is ready.Serve hot with dosa/appams/idiappams/idlis/rice.
