This chicken curry is made with roasted coconut and roasted spices which gives a very good flavor and taste to the curry.This Chicken curry is a very good combination for rice,chappathi,dosa,idlies,idiyappam etc.
Ingredients
Chicken - ½ kg
Onion -1 big thinly sliced
Ginger garlic paste –1tbsp
Tomato – 1 big
Oil-1tbsp
Salt
To roast and grind
Coconut grated –4tbsp
Dry red chillies – 4
Coriander seeds-3tbsp
Fennel seeds – 1 tsp
Cardamom – 2
Cloves – 5
Star anise-1
Cinnamon – a small piece
Small onions – 6
Tomato-1/2
Fennel seeds – 1 tsp
Cardamom – 2
Cloves – 5
Star anise-1

For Tempering
Cinnamon – a small piece
Bayleaf-1
Fennel seeds – 1/2 tsp
Cardamom – 2
Cloves – 5

Method
- Heat oil in a pan and add cinnamon ,cardamom,star anise ,cloves and saute well for few minutes
- Add Coriander seeds and dry red chillies and fry for few minutes.
- Add coconut and saute
- Add shallots
- Add tomato
- Allow it to cool completely and grind it to a fine paste
- Heat Oil in a large pan,add bayleaf, cinnamon,cardamom,cloves,star anise,fennel seeds
- Add Ginger garlic paste and fry until the raw smell goes.
- Add sliced tomatoes and saute till all mashed up.
- Add chicken pieces,salt and saute for 5 minutes .the chicken will ooze out all water from it.
- Add the coconut masala
- Add enough water and allow to cook for 10 to 15 minutes.
- Add chopped coriander leaves.
