This vegetable kuruma is a wonderful recipe that goes well with Chapathis/Puris and even parotta .Am a huge fan of saravana bhavan veg kurma and this kurma taste the same.so do try this flavorful kuruma and serve hot with rotis /puris or for parotta's

Garam masala-1 tsp
Coriander leaves-finely chopped
Mint leaves-5 chopped
Coconut-1/2 cup
Roasted gram(pottukadalai)-3tsp
Poppy seeds-1/2tsp(optional)
Cashewnuts-1tbsp
Green chillies-2
Cinnamon-1/2 inch stick
Cardamom-3
Cloves-4

Method
- Grind coconut,pottukadalai,poppy seeds,Cashewnuts,Green chillies,Cinnamon,Cardamom,Cloves in a blender and keep aside
- In a pan ,cook carrots ,potato ,green beans ,peas adding enough water and salt.
- In a pan,add oil and temper it with Bayleaves,Cloves,Cardamom and Cinnamon
- Add chopped onions and saute it until it becomes light brown color
- Add ginger garlic paste until raw smell goes
- Add chopped tomatoes and saute until it becomes mushy
- Add the coconut masala and saute it well for few minutes
- Add the spices chilli powder,coriander powder,turmeric powder and garam masala and saute it for a minute
- Add the cooked vegetables along with the water.Check for salt and add required salt.Allow it to boil for few minutes
- Finally add coriander leaves and mint leaves
- Serve hot wit hot roti's or parathas
Notes
- If you want a white color,skip adding red chilli powder,turmeric powder ,coriander powder .Instead for spiceness add extra green chillies.
- You can add any vegetables like carrot,peas,potatoes,peas,cauliflower,turnip,soya beans etc
