Rasmalai

Rasmalai is a easy recipe with fabulous results. It involves making paneer(soft) by curdling milk and then cooking the paneer in a light sugar syrup to impart some sweetness and finally when they have doubled in size, they are added to the rabdi( sweetened condensed milk).

Ingredients

For paneer



full fat milk-2 litres
lemons-3

for Rabdi

full fat milk-4 cups
sugar-1 cup
cardamom powder-1/5 tsp
slivered almonds and pistachios
saffron- 15-20 threads

For sugar syrup

water-10 cups
sugar-2 cups

Directions

  • To  make paneer:Boil the  milk.                               boilmilk
  • once the milk starts to boil switch off the heat and after a minute add lemon juice to cuddle the milk                                                  Add lemon
  • The milk is fully cuddled                                         Curdled milk
  • Now stain it through a cheese cloth                      Strain it using cheese cloth
  • Rinse it with cold water to remove the lemon flavorRinseit with cold water
  • Tie it up and squeeze the extra moisture and hang it for 30 minutes.Hang it for 30 mts
  • Meanwhile make rabdi and light sugar syrup
  • To make rabdi :Add  4 cups of milk and sugar and put it in low heat and let they simmer                                                                Rabdi
  • Take 1 tbsp of warm milk and soak some saffron strands.soak saffron
  • Once the milk reduced,add cardamom powder to itAdd cardamom powder
  • Add the nuts                                                          Add nuts to the rabdi
  • Add the saffron                                                   add safron
  • To make Sugar syrup:Add 2 cups of sugar in 10 cups of water and bring it to a rolling boil                                                             Sugar syrup
  • Next lets knead the paneer.knead it for atleast  10 min only then we will get soft rasmalais                                                         knead paneer
  • Now make it into small balls and then press the gently to flattern themMake balls
  • Now drop it into the boiling sugar syrup and let them cook for 10 minutes .The balls will absorb the sugar syrup and double the size. Switch of the heat and allow it to cool                                                                    add paneer balls to the sugar syrup
  • Squeeze them a little to release some extra water contentSqueeze the water content
  • Drop it into the rabdi and let it absorb  for some timeAdd the cooked paneer balls to the rabdi
  • Serve the delicious  Rasamalais
