Rasgulla

Rasgulla / Bengali Rasgulla is a festive sweet made from paneer which is obtained by curdling milk and shaping them into balls which are then cooked in a sugar syrup. This is an extremely simple and tasty recipe.

Ingredients


Full fat milk-1gallon
Lemon juice-3tbs
Sugar-5 cups
Water-15 cups
Cardamom-6

Method


  • In a pan,heat the milk and allow it to boil.


  • Once the milk starts boiling,switch off the heat and add lemon juice


  • It will curdle.
  • Strain it with the help of cheesecloth

  • To remove lemon flavor,,wash it well with cold water


  • Tie the cheese cloth,squeeze the water and Hang it for 30 minutes.
  • After 30 minutes,knead this for minimum 3o minutes gently to make it like a soft and smooth dough.


  • Make equal size balls 




  • In a pan boil the water adding sugar and cardamom to it and allow it to come to rolling boil.


  • Add the balls  carefully one by one.


  • Cover the pan and cook it for 15 minutes.



  • Switch of the heat and transfer to a bowl.


Notes

  • To curdle milk,you can also add vinegar or curd.
  • Kneading the dough for minimum 10 mins is important. It helps in getting soft rasagullas.
