Hyderabadi Prawns Briyani

Prawn Biryani / Shrimp Biryani is an extremely simple recipe to make with fantastic results each time. Because the prawn/shrimp meat is very tender and delicate the marination masala and the cooking time have to be modified.The shrimp gets a nice coloring on the ouside and its soft and juicy


Ingredients



Basmathi rice-1 1/2cups
Oil-2 tbsp
Bayleaves-2
Fried onions-1cup
Coriander leaves-1/2cup
saffron-few strands
Ghee-1 tbsp

For Spice Bag

Fennel seeds-1tsp
Shahi jeera-1tsp
cardamom-4
cloves-4
cinnamon-2
star anise-1
mace-1
peppercorns-10 to 15


For marination

Deveined prawns-1/2kg
Chilli powder-1tbsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Garam masala powder-1/2tsp
curd-1/2cup
Ginger garlic paste-2tsp
grounded green chillies-3
Coriander leaves-1/2cup
mint leaves-1/2cup
Salt-required
Oil-2tbsp
lemon juice
oil

Method


  • Marinate the prawns with chilli powder,Garam masala powder,turmeric powder,coriander powder salt,ginger garlic paste,curd,lemon juice,grounded green chillies,fried onions,oil and rest it for 30 minutes




  • Add the spices bay leaves ,cardamom,cloves,cinnamon sticks,pepper,star anise in a cheese cloth and tie it 



  • In a big pan,add oil .bayleaves and the spice bag 


  • Add required water and allow to boil



  • Once the water stats boiling add rice and allow to cook 75 percent.


  • In another big pan add oil and marinated prawns.


  • Next a layer of 75 percent cooked rice.



  • A layer of fried onions.


  • A layer of coriander leaves


  • Again a layer of remaining rice



  • A layer of fried onions.


  • A layer of coriander leaves



  • Add some ghee and saffron soaked milk


  • Close it with tight lid and cook for 15 minutes in medium heat



  • Switch off the heat and allow it to rest for 10 minutes.inbetween dont open the lid
  • Our Delicious Hyderabadi prawns briyani is now ready.Serve it with any raita
