Chicken Curry with Roasted Coconut and Spices

This chicken curry is made with roasted coconut and roasted spices which gives a very good flavor and taste to the curry.This Chicken curry is a very good combination for rice,chappathi,dosa,idlies,idiyappam etc.






Ingredients


Chicken - ½ kg
Onion -1 big thinly sliced
Ginger garlic paste –1tbsp
Tomato – 1 big
Oil-1tbsp
Salt


To roast and grind


Coconut grated –4tbsp
Dry red chillies – 4
Coriander seeds-3tbsp
Fennel seeds – 1 tsp
Cardamom – 2
Cloves – 5
Star anise-1
Cinnamon – a small piece
Small onions – 6
Tomato-1/2

For Tempering


Cinnamon – a small piece
Bayleaf-1
Fennel seeds – 1/2 tsp
Cardamom – 2
Cloves – 5
Star anise-1



Method




  • Heat oil in a pan and add cinnamon ,cardamom,star anise ,cloves and saute well for few minutes


  • Add Coriander seeds and dry red chillies and fry for few minutes.


  • Add coconut and saute


  • Add shallots 


  • Add tomato 
  • Roast everything till it get a nice brown color.

  • Allow it to cool completely and grind it to a fine paste


  • Heat Oil in a large pan,add bayleaf, cinnamon,cardamom,cloves,star anise,fennel seeds 

Add sliced onions and saute  until it becomes soft and translucent.



  • Add Ginger garlic paste and fry until the raw smell goes.

  • Add sliced tomatoes and saute till all mashed up.


  • Add chicken pieces,salt and saute for 5 minutes .the chicken will ooze out all water from it.

  • Add the coconut masala


  • Add enough water and allow to cook for 10 to 15 minutes.


  • Add chopped coriander leaves.


  • Delicious Chicken curry is ready.



Notes



  • Using Coconut oil gives authentic taste.
  • The color of the curry comes from how well you roast the coconut and spices.so roast the coconut until you get a nice brown color.
