Chettinad Egg curry/Gravy

Ingredients


To roast Eggs

Eggs-4 halved
Oil-1 tsp
Turmeric powder-1/4 tsp
Salt-1/2 tsp

For Chettinad masala

Cinnamon sticks(1 inch)-2
Cardamom-4
Cloves-4
Star anise-1
Peppercorns-1 tbsp
Coriander Seeds-2 tsp
Red chilli-3
Fennel seeds-2 tsp
Cumin Seeds-2 tsp

For Gravy

Oil-2tbsp
Mustard seeds-1/4 tsp
Bayleaves-2
shallots-200 gm
Ginger garlic paste-1 tbsp
Green Chillies-3
Tomatoes-2 chopped
Turmeric powder-1/2 tsp
Chilli Powder-1 tbsp
Chettinad masala powder-2tbsp
Curry leaves


Method


  • First lets roast the eggs in a very low heat.Add oil then add turmeric powder and salt
  • Place the eggs halves and cook them for 2 min on both the sides.

  • In a pan,dry roast cinnamon sticks , cardamom, cloves, star anise, pepper corns,coriander seeds,red chili, fennel seeds,cumin seeds
  • Once it get cooled,powder them in a blender.Our chettinad masala powder is ready.we need only 2 tbsp of them.Store the remaining in an air tight container for later use.
  • Next let's prepare gravy:In a pan,add oil and temper it with mustard seeds and bayleaves
  • Add Shallots and saute for few minutes
  • Add Ginger garlic paste and saute until the raw smell is gone
  • Add Green Chillies and the spices turmeric powder,chilly powder and 2 tbsp of chettinad masala and saute them
  • Add chopped tomatoes and cook until they become mushy
  • Add some water and allow to boil
  • Finally add the roasted eggs and slowly mix them
  • Garnish it with curry leaves
  • Our Delicious Chettinad Egg curry is ready to serve

Notes

  • You can also use big onions instead of Shallots,but shallots gives an extra taste to the gravy.
